Welcome to Carillion Wines!
We have a long track record of excellence and continue our focus on quality and respect for our heritage, while exploring the potential of exciting varieties and new winemaking techniques.
Most of our range is limited to 150 to 250 cases each vintage, with some releases as rare as 250 bottles.
Tim Davis (pictured left) is at the helm as Vigneron and owner. Working closely with winemaker Andrew Ling as Winemaker and the vineyard team, Tim and Andrew concentrate on producing small batch wines from low-crop premium fruit. We pride ourselves on taking adventurous leaps into alternative varieties and experimental winemaking techniques whilst at the same time being respectful of our heritage and the vignerons of years’ past.
We believe that all great wine begins in the vineyard, and we have carefully selected distinct vineyard sites for their soil, climate and fruit growing capacity. Our vineyards are Tallavera Grove in the Hunter Valley, cool-climate Carillion in Orange and Stonefields in Wrattonbully. Each vineyard specialises in different varieties of grapes enabling us to produce a wide range of wines with the best fruit available for each varietal.
As a boutique producer of premium fruit from a range of climates, soil types and grape varieties, we can quite literally take “the pick of the bunch” to create our wines. We manage our vineyards with a hands-on approach, often identifying individual rows or portions of rows to pick for small batches of wine.
Our Hunter Valley Cellar Door is located at our Tallavera Grove Vineyard in scenic Mount View, enjoying views widely recognised as the best in the Hunter region. The celebrated French restaurant Bistro Molines provides Provence-style food, and visitors can enjoy an overnight or weekend stay at gorgeous Little Orchard Cottage.
